Gluten-free and dairy-free dessert made with coconut milk. We last reviewed Pudology puds in 2012, shortly after their launch. A couple of new flavours have landed since then, including this lemon pudding. It's a sort of mousse / fool rather than a cheesecake, as it doesn't have a base:
This is a really simple dessert with just a single layer and a pure flavour - a very citrussy lemon. The mousse is pretty light, being mostly coconut milk thickened with agar.
The texture is not entirely smooth as there is quite a bit of lemon zest mixed through the mousse. The zest won't be to everyone's liking, but if you like tart lemon desserts, you'll probably like the zest too. This dessert is not overly sweet and could be a little more indulgent. The coconut milk means that there is a distinct coconut taste, but against the lemon it's not overpowering.
Pudology also launched a chocolate orange flavour last year. We're still hoping the espresso dessert that they promised will appear one day - or better still a mocha or tiramisu flavour.
