Vegamigo Egg-Free Omelette Mix for vegan omelettes

For dairy-free, soy-free and gluten-free vegan omelettes, just mix with water. This German powdered mix is the first egg-free omelette product to arrive in the UK, and is based on a mix of flours including chickpea, potato and tapioca. Just like The Vegg, it's also got an eggy flavour thanks to kala namak:



The mix is a coarse powder, the colour of soy flour (but is soy-free). As well as the flour mix, the product also contains oat flakes and xanthan gum.


Preparation is quick and easy - just mix with water to make a batter, then let it stand for 1 minute. We tried the precise measurements on the pack, which results in quite a thick batter. In our tests, the batter should be a little bit more runny for best results.


We also tried the instructions on the pack for frying, which suggests adding the batter to the pan, followed by the vegetables. This doesn't cook the veg through though, so do it in reverse - fry the veg for 1 minute, then add the batter.


A mix of spring onions (scallions), red pepper and button mushrooms is good. Cook the omelette without stirring, until it sets, then flip it to cook the other side. Forget the suggestion to add vegan cheese - we tried it with Violife, and it doesn't add anything.

This product is great. The resulting omelettes are nothing like eggy omelettes, but they taste fantastic. The texture is a bit like an eggy waffle rather than an omelette. It's very different to a tofu omelette and much tastier, thanks to the kala namak (black salt).

No doubt you've seen lots of vegan recipes for chickpea flour omelettes, and you could make this mix up yourself, but that would be far less convenient. With a long shelf life, you're never more than 5 minutes away from a quick and tasty vegan omelette. How far we've come.

The mix is quite expensive at the moment, and the packs are small too, but trust us, it's worth it.
