Doppelkeks sandwich biscuits from Vegan Tuck Box this month. Vegan custard creams are hard to come by, so these vanilla cream biscuits are a welcome substitute. Large round doppelkeks (double biscuits) are popular in Germany and France, but rare in the UK:
The biscuits are hard plain biscuits, like a rich tea or an arrowroot, and are crunchy. The vanilla cream is sugar fondant just like you'd find in a custard cream. The size of the biscuits means they're hard to dunk and quite hard to eat - perhaps that's why they've never caught on here. They're good biscuits though, especially if you miss custard creams.
