Review: 'The Bridge' Rice Cream

The Bridge - Bio Rice Cuisine Dairy Free Vegan Rice Cream

Dairy-free, soy-free and gluten-free vegan cream alternative, made from italian rice and sunflower oil. Badged as Bio Rice Cuisine from Italian firm 'The Bridge'. This is an unsweetened 'single' cream primarily meant for savoury dishes. We made a potato gratin to check it out:

This is a low-fat cream at about 8% fat - far lower than dairy single cream at 18%. Thanks to 30% rice solids it does have a decent amount of body, although it's a bit translucent looking. The cream tastes sweet despite the lack of sugar - the rice is presumably germinated to produce natural sugars.

We try and stick to simple recipes when testing products like this, so a simple potato gratin was ideal. It's just seasoned potato and onion slices, with the cream poured over and baked. We added a tiny bit of grated Violife cheese towards the end of baking.

The review of that vegan 'steak' in the background is coming up soon

After 45 minutes in the oven, the cream has mostly evaporated, but leaves a nice silky coating on the potatoes. This can't really replace dairy cream as it doesn't have enough fat, body or creaminess, but it is a useful substitute for dishes like this.

If you're avoiding soya, then this rice cream is a good alternative to soya creams. It's also good in its own right as it has a very neutral taste and the sweetness is natural too.

The Good: Neutral and naturally sweet
The Not-so-good: Lacks creaminess
