Wheat-free shortbread biscuits from Northern Irish bakery Sunstart. The company makes it's own range of gluten-free biscuits and tray bakes, many of which sadly contain dairy. Sunstart also produce supermarket own brand Free-From biscuits for all of the big four. These golden crunch cookies aren't labelled as such, but are clearly very close in style to shortbread biscuits.
For once, this gluten-free recipe doesn't contain rice flour... but it does have rice flakes. Maize (corn) flour is the main ingredient, along with a large dose of coconut. We've noticed a lot of the gluten-free biscuits we review contain coconut... and this time it's very distinct within the flavour. Apart from the coconut, these cookies taste pretty much like traditional shortbread, being soft, dry and crumbly. The texture is not bad, but a little dry... you'll want a cup of tea to wash one down.
We're always surprised that companies never try to replace the protein from the missing gluten... there's no obvious source of it in this recipe. We can't help thinking that protein could be the key to a less friable texture in gluten-free baking.
