Lakeland 'Experichef' Agar Agar Powder

Not flakes, but powder, just like all those recipes by Isa and Miyoko require. In the UK you can buy agar flakes in any wholefood shop, but finding the powder usually means buying online. Lakeland's Experichef range includes xanthan gum (also used by Miyoko for cheese making), plus this agar agar. We tested it out on a cheesecake:



The powder is fine, and you need very little of it for setting. Just 1g in 100ml of liquid is enough for a jelly. Although is looks like a small tub, for nearly a fiver, it will go a long way.


We naturally used a recipe from Vegan Pie in the Sky - the key lime pie (a lime cheesecake) made with coconut milk and almond milk. The agar worked perfectly, in fact a little too well and we'd use slightly less next time.

We might even have another go at some Artisan Vegan Cheeses too.

  1. agar + balsamic vinegar = sheets of salad dressing. no more soggy salad sandwiches! genius.

  2. Update: we remade the key lime pie with half the amount of agar powder (1tsp) and it was more like a blancmange, which was preferable.
