Review: Hraska Gluten/Egg Replacers

Hraska gluten free flour blends

Yep, these mixes function as both egg and gluten replacers. If you think about it, egg and gluten both provide structure in baking, and Czech firm Hraska have developed products that do a similar thing. The UK distributor Bearsted Foods sent us two of the mixes for review - the Flour Mix and the Batter Mix:


The two products are very similar - they're both blends of pea, corn, rice and millet flours. The Savoury Batter Mix is simply pre-seasoned as well.

Vegan burgers

The mixes are really versatile and there are plenty of recipes on the website glutenfreemarket.co.uk. We chose to make the veggie burgers using the simplest recipe ever - just grated vegetables and the batter mix. The results were reasonably good, although there's a distinct starchiness to the texture, which is hard to cook out without burning the burgers.

We used the flour mix in a sweet recipe - a lemon cheesecake (yep, it's a dairy substitute too). The added ingredients in this were soya milk and coconut oil, with some fresh lemons too of course. This is a baked cheesecake, and on cooking, the flours set in a gelatinous way. 

This recipe needs work - it was far too firm, but it holds potential. There's also the issue of the pea flavour, which was rather strong. We think that reducing the amount of flour mix, and replacing with silken tofu, would solve both issues.

These Hraska mixes hold a lot of potential for use in egg and dairy-free baking and cooking. The recipes available at the moment focus too heavily on using lots of the product in each dish, but with moderation we think they would prove very useful.
