Slicing sausage from the Vegusto range of vegan meats and cheeses. We've been sampling some of Vegusto's range recently and the idea of a good slicing sausage appeals greatly. Lyon sausage is apparently a highly-seasoned smoked pork sausage with a bit of garlic, but we've never tried it so can't comment on authenticity. Let's review it as a versatile vegan slicing sausage:
Once cut, this sausage immediately reminded us of Granose Bologna, a canned gluten roll from the 80s/90s. The taste is a little reminiscent of Bologna too, but then gluten has quite a distinctive taste which is difficult to mask with seasonings.
Whilst this sausage is smoked (not strongly) and fairly well seasoned, we find that the heavy reliance on gluten is becoming a trademark of Vegusto stuff. The problem with wheat gluten is that once you put this sausage on bread, the flavour gets lost. Sure, you get some of that chewy meaty texture, and a little bit of garlic and smokiness, but not much.
This isn't bad sausage, and whilst it appears expensive to buy as a large pack, it actually works out cheaper than sliced alternatives. Whether you prefer the alternatives, which have a little less reliance on gluten as a flavouring, is up to you.
