Weird Science: The Apricots and Soya Milk Trick

Add soya milk to apricots

Dried Apricots + Soya Milk + 8 Hours = Creamy Dessert. 

Thick and creamy apricot dessert!

This is weird and we don't know how it works, but it does. It tastes great too. Here's how to do it:


Chop a few dried apricots - about a tablespoon's worth and put them in a ramekin or dessert dish. Pour over some soya milk (soymilk), sweetened if you prefer. Pop the ramekin in the fridge and leave overnight...or make it at breakfast time for a dessert in the evening. After around 8 hours you'll have a thick and creamy dessert, with plump moist apricot pieces.

This trick comes from a vintage 1986 vegan cookbook...called The Vegan Cookbook (they didn't need original names in those days). Authors Alan Wakeman and Gordon Baskerville reckon that the apricots simply thicken the soya milk but don't explain how. We wondered if there was a culture going on so we tried re-culturing some fresh soya milk with the creamy stuff, but to no avail. We're none the wiser. Any ideas?
