The folks at vegan bakery Smashing Tarts in Glasgow have given us the recipe for their rock star approved vegan whoopie pies. Smashing Tarts is a family run business supplying local cafes and they also bake to order for special occasions. Originally from Canada, Lisa and Navarro moved to Glasgow in 2007. They believe that everyone needs yummy cake, regardless of dietary requirements... and we couldn't agree more:
SMASHING TARTS VEGAN WHOOPIE PIES
Pre-heat oven to 170C / 340F
Wet Mix:
Cream 1 cup soft brown sugar
with 1/2 cup non-dairy spread
beat for about 2 minutes until light and fluffy
Mix 1/2 cup non-dairy yogurt
with 1/2 cup + 2 tbsps non-dairy milk
and 1 tsp vanilla
Add to the creamed butter/sugar and combine
Dry Mix:
Sift and mix together:
1 and 3/4 cups plain flour
3/4 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
Add the dry mix into the wet mix and combine to make a dough. The dough should be thicker than a cake batter, but looser than cookie dough. Spoon the batter onto a cookie tray lined with baking parchment and bake for 12-15 minutes (whoopies should spring back when lightly touched). Allow to cool completely and sandwich with "butter" cream frosting:
Vanilla Buttercream:
1/2 cup non-dairy spread
2 cups icing sugar
1 tsp vanilla
1 tbsp non-dairy milk
Cream everything together until smooth.
Rock Star Approved Whoopies:
Smashing Tarts have met up with some famous vegan rock stars and treated them to their whoopie pies.. Mark O'Connell from Taking Back Sunday, Rise Against band members and Andrew Hurley from Fall Out Boy/The Damned Things.
