A vegan version of that splendid but peculiar affair...the brandy snap basket. We say peculiar because they never contain brandy, and are never flat like a 'snap' biscuit. They probably used to be made with brandy, and are still usually made with butter...which thankfully these aren't. These ginger flavoured baskets are designed to be filled with ice cream, so we added a scoop of the dairy-free stuff and gave them a try.
Askeys were excluded from our recent Ice Cream Cones Taste Test as their cones currently contain milk protein. There aren't so many makers of brandy snap baskets, with Askeys being the most widely available.

The baskets are baked hard, and can be pretty tough when filled with cold ice cream. If you want them slightly chewier, then leave some out of the foil pack for a few hours, or use tongs to hold them in the steam over your kettle for a few seconds. Don't try microwaving them...this only makes them harder.
The flavour of the baskets is mainly ginger, but with the toffee hint of the caramelised sugar. The baskets are hard and brittle, but do melt in the mouth if you hold them on your tongue for a little while. We did find the baskets slightly greasy, but that's pretty normal for brandy snaps...health food this isn't.
These brandy snap baskets look good, taste good and make a great perch for your favourite dairy-free ice cream.

These look good but its a pity about the palm oil.
ReplyDeleteA rock and a hard place for vegans....animal abuse with butter, ecological impacts with palm oil. There is no temperate climate source of hard fats, other than hydrogenated oils.
